Forma bread with seeds

A very easy bread to make for beginner bakers as well as multi-grain bread lovers.
Mix the following ingredients, (I usually do it in the evening). and leave them at room temperature covered with a towel, the dough is quite wet but don’t be afraid of it.


  • 650 g of water
  • 150 g sunflower seeds
  • 60 g of pumpkin seeds
  • 40 g chia seeds
  • 100 g of active yeast (see how to make your own yeast) link
  • 100 g whole grain rye flour
  • 100g whole wheat flour
  • 16 g malt powder (optional). It will give a dark color to the bread and enhance the flavor.
  • 230 g Whole grain rye flour
  • 100 g wheat flour
  • 18 g of salt

Let the dough rest for 30-60 minutes.

Place the dough in a non-stick forma. With a wet hand, spread the dough on the mold. Spread the mix of the seeds you used over the dough. Leave the dough to rest until it has increased in volume to about 30%.


You don’t have a non-stick pan, grease it with oil before placing the dough.
Depending on the temperature of the room this can take up to 2 hours.
In a preheated oven at 200C.
Place the form in the oven and reduce to 180C.
Bake for about 1 hour and 30 minutes. The temperature in the core of the bread should be at 98C.
Remove from the oven and let rest for several hours.
Wrap with a towel if you like the bread to have a soft texture.
